Limoux is the cradle of the oldest traditional method sparkling wine in the world: as early as 1531, the Benedictine monks of the Abbey of Saint-Hilaire discovered the secret of effervescent wines, nearly two centuries before Dom Pérignon codified the méthode champenoise. Gérard Bertrand pays homage to this millennial history with the Crémant de Limoux Brut Rosé Heritage "An 825", whose name evokes the first written record of the Abbey, dating back to the year 825.

The blend of Chardonnay, Chenin Blanc, and Pinot Noir is sourced from vineyards at altitudes of up to 700 meters. The Pinot Noir is vinified with a very short maceration on the skins to extract its delicate salmon-pink color without releasing tannins, preserving elegance and finesse. After malolactic fermentation, the base wines are blended and undergo secondary fermentation in the bottle according to the méthode traditionnelle, with 8 months on the lees to develop aromatic complexity and a fine, persistent perlage.

On the nose: strawberry, raspberry, and notes of toasted brioche. On the palate: lively, generous, with a long and silky finish.
